NEA Annual Conference Dinner….. Great Success!

Most of us on a Tuesday night would be at Home sitting down ready to watch another episode of EastEnders…. Not Red Anywhere…. We were at Brighton Dome last night cooking for 300 guests for the Annual NEA (National Energy Action) Conference Dinner….
We were delighted to be asked to cater for this prestigious event at the Dome, a venue that is fantastic for the numbers with its great facilities both front and back of house!
The menu needed to be excellent as usual for Red but also simple enough that it could be served in a short space of time. The menu consisted of Leek and Potato Soup with Crispy Leeks & Cheese on Toast. Roast Leg of Welsh Lamb, Fondant Potato, Rosemary Jus, Bowls of Braised Red Cabbage & Green Beans. For the dessert we finished off with Dan’s very silky Chocolate Mousse served in a Martini Glass with White Chocolate and Passion Fruit Sorbet……
It was a great night and everything went to plan…. we swerved the dinner in the time allocated and even had time to enjoy one of the desserts myself…. (Quality Control)
My team at Red did really well with special thanks to Laura and Richard who ran front of house with a professional and attentive team. Big thanks to my sous Chef Will and the rest of the kitchen team who all excelled under pressure on a big night!
