…. Not just the Food!!

Last weekend Red catered for a private client at their beautiful home on the Kingston Gorse private estate in West Sussex. The event was to celebrate a birthday and what a celebration it was….Fine Food, Great Wine, Summer Cocktails, Opera Singing and a band to rock the night away alfresco by the pool…. Red’s usual standard!!

The evening kicked off with Bellini’s, Champagne and some sublime Canapes served by the wonderful team at Red… Then we were entertained by a young male opera singer (sorry did not get his name) but he was not Italian… but sang in Italian, very well!

We then moved guests to the orangery where 40 guests sat down and awaited the dinner cooked by Dan, Will and Becks!

We started off with an Italian themed Mezze (your getting the theme here!) see pictures below, followed by Rump of Sussex Lamb served on an Italian style hot salad, served with Roasted Potatoes with Oregano, Lemon and Olive Oil…. Italian of course!

To finish was a collection, well more like a platter of Italian desserts… Tiramisu, Raspberry and Hazelnut Pavlova, Frangelico & Praline Ice Cream, Lemon & Vanilla cream with Lemoncello Jelly and if that was not enough…. a chilled shot of Lemoncello!!

This was all washed down with some stunning white and red Italian wines which were purchased direct from Italy!

After the dinner all the guests made their way to the pool area to watch a fantastic firework display…. about 10 minutes I reckon (see pictures below) after that guest chilled out with Mojito’s, Tuscan Mules and a nice bottle of chilled Peroni… Guests danced the night away to the sounds of The Sirens Band, 2 stunning ladies with voices to match who sang a mixture of Soul, Rock and Pop…. by the amount of people dancing…. they enjoyed it!

Unfortunately the night had to come to an end and we loaded up, cleared up and got ready for the next event…. Summer Ball for 200 accountants!

1 Free Range Duck Egg or Hen’s Egg

2 -3 Slices Cured Parma Ham

3 Medium Spears of Asparagus

1 small handful wild cress salad

50ml Extra Virgin Olive Oil

Good pinch of Salt and Pepper

3 Egg Yolks (for the Hollandaise sauce)

1 Tablespoon White Wine Vinegar

1 packet unsalted Butter (should be enough for 4 servings easily)

N.B. You’ll need a total of 4 eggs for each serving – 3 yolks for the Hollandaise sauce and 1 soft boiled

Method

Snap the Asparagus spears at the root end using your thumb and finger. They will snap at the “tenderness point”.

Place the Asparagus into boiling salted water for approx 3 minutes or until tender (important not to overcook and use plenty of salt).

Plunge the Asparagus into ICE cold water and leave.

Bring a pan of water to the boil and add the eggs for soft boiling.

Simmer for 5 minutes depending on egg size (water must simmer and bubble otherwise egg will not cook evenly).

Take the pan off the heat and leave the eggs in the water for 20 minutes.

Remove eggs from pan aside from the ones you will keep soft boiled for each serving and whisk egg yolks in a stainless steel bowl over hot water for 2 minutes until egg thickens (make sure bowl does not touch the water as this will scramble the egg yolk and be no good.

Add White Wine vinegar and a little warm water (1 tblsp) to the whisked egg in the bowl. This emulsifies the egg and vinegar and enables you to add the butter more easily.

When the mix has thickened, keep it warm (a gentle simmer will be sufficient).

Melt butter in microwave or in a pan. The butter must be warm, if cold it will spilt.

Add the butter carefully to the warmed egg mixture whilst whisking at all times.

Once all the butter has been added, take off heat, taste and season, adjust thickness if you wish with a little warm water.

Leave somewhere warm.

Presenting the dish

Dry off asparagus and season with olive oil, salt and pepper.

Peel egg under cold water, dry off and cut lengthways (be careful as should be runny) and season egg with salt and pepper.

Arrange asparagus on plate, add cut egg, arrange salad cress with a little drizzle of Olive Oil, add Hollandaise over the asparagus or in a dish (as shown).

A day in the life of a trainee event co-ordinator…

9 am – I drive into the car park, I’m on time (it’s a miracle) ditch the car in a vacant space and bound into the office. Take off my coat and turn on the computer, and then undertake the most important job of the day – putting the kettle on! No doubt when Dan comes in he will demand a cup of tea, mind you it’s usually coffee he asks for when I’m making it (he thinks I can’t make tea!) I head back towards my computer as Laura Walks through the door, big smile and hugs as we discuss what we did over the weekend. The office begins to fill; once all the team are in we get to work. In the main office all you can hear is the taping of keys on the keyboards as each member of staff is going about their work. Laura replying to enquiries built up over the weekend, Andy organising staff for the upcoming event, and me replying to the brides who have booked Eastlands Estate as their wedding venue.
10 @ 10 – not entirely sure what it stands for, but it must be important because Dan comes down from above (his office is on the 1st floor) and we all discuss the important stuff going on in the business, the Red Anywhere NEWS! (Almost as exciting as the regular news!!)
Back to work. By this point Dan has phoned down to me or Laura and requested another cup of tea, so I jump to it and scuttle off to the coffee area and re fill the kettle, once it’s boiled I whisk another steaming cup of coffee up to Dan, then thunder back. I settle myself behind my vast desk and begin to type up notes and responses to our brides.

12.15 pm Andy and I have a meeting at Eastlands with a bride and groom who are due to be married in a couple of weeks. I pack up their notes and print off planners, snatch up a few pens and dash out the door, jump into Andy’s van and then we’re off. The meeting isn’t until 1 pm, but it’s a long way to Eastlands (especially when Andy’s driving) fuel light flashes, and we head for a petrol station. It’s all a devious ploy of Andy’s to stop and get a MacDonald’s! Now Andy and the van are fully fuelled and ready for our meeting. We arrive at the stunning Estate and park up. We meet the clients and discuss their forthcoming wedding. Then it’s back to the office to type up the meeting notes and make Dan more coffee.

3 pm arrive back at the office just in time to set up the tasting room for this afternoons meeting, ‘It’s Tasting Time’ I lay up the meeting room with cutlery, crockery and glassware, as Laura welcomes the clients. I take my seat in the meeting at Laura’s side to take notes and learn ‘how a pro does it!’ We sit through canapés, starter and main all the while my stomach growling, trying desperately to concentrate on the conversation going on in front of me. Finally dessert is served, its hell, Dan always creates indescribable food but wow dessert is unbelievable, and to say I have a sweet tooth is an understatement! Finally the torture is over and the clients leave.

4.30 pm again I nip off to flick the kettle on and run Dan’s final cup of coffee to his office. I don’t know anyone who drinks as much coffee as him (although I always seem to bring down a half full cup!). Final hour of the work day and time for every office junior’s favourite job, filing, actually I have spent hours organising the files and correspondence so no one dares touch them, okay so I might be a bit obsessive. But at least now everything’s in order!

5.30 pm computer off, files away, kettle empted and lights off. Were all off down the pub! (If we’re lucky Dan might buy the first round!)

Hi everyone, Will O’Hara here – Dan’s Sous Chef. Here is my latest blog… Enjoy!
The World cup 2010 is fast approaching and with less than two weeks to go, you may be planning a few gatherings or even a barbecue to enjoy the most celebrated sporting event in the world!

As the host of the world cup is South Africa, here is a little about the current day South African cuisine.
Many dishes eaten today are closely based on past times, such as Pap, an accompaniment made from maize and eaten much like rice, which was and is a native black African staple.
Bobotie, a spicy malay dish similar to shepherds pie is another popular dish along with Potjiekos which became an important dish during the Afrikaners great trek.
A popular south African pastime is the Braai, equivalent to our barbecue, which also dates back from the trekking days. All manner of fresh foods are cooked over coals and most surburben houses have a specific Braai area.
Here is a traditional South African dish, normally cooked on a Braai.
Boerwors, Pap en Sous
Boerewors is a specifically spiced whole meat sausage.
True wors has very little fillers and much more meat. This comes in thick and thin portions.
Cook your wors over a slowish fire until brown all the way through.
Pap
Pap is a Mielie based porridge. Add 3 cups of mielie pap to a cup of cold water until smooth, add another 3 cups and some salt. Place pot on stove and heat until the pap is hot. Add more water if necessary. Reduce heat and cook slowly for 1 hour stirring and adding more water (if necessary) every 10 minutes. Serve with sauce.
Sauce
Grate an apple
Finely chop an onion
Crush two cloves of garlic
Finely chop one tomato
Fry in olive oil
Add 1 tablespoon of sugar, tomato sauce, 2 tablespoons soya sauce.
Add 1 can of chopped tomatoes
Flavour with salt and pepper
Cook until the onion is cooked and you have a thick sauce.
To serve: Place pap on plate, add a chunk of boerewors and top with sauce.
Enjoy…

Red Anywhere are so excited to of been given the contract to cater exclusively for the newly opening “Ocean Suite” on Eastbourne Pier…

Dan Said…”I am so excited that finally we have secured a contract that all parties are truly excited about… The potential at this new venue is staggering for both corporate and private clients”…

Red were invited some 4 months ago to apply for the tender along with 7 other local caterers. We then got confirmation that we were down to the last 2. This would be decided by a tasting and looking around our premises!

The tasting obviously went very well and Christos, GM at the Pier was impressed with our kitchens and set up

We got confirmation last Friday the we had one the contract exclusively and would be the official caterer from June 1st 2010 on a rolling contract.

Andy and I were so pleased along with the rest of the team, “It’s amazing and so exciting that Red can secure a contract of this magnitude on a brand new venue”

We aim to give all our experience and resources in helping the team at the pier to launch the suite with a bang and make it a dominant force within the venue industry!

The Venue is undergoing major refurbishment as its been empty for a few years, the views as the name states “Ocean” are amazing and it’s like being on a cruise ship but without the rocking as you are high up and the venue is literally at the end of the pier…. The Bar is being sponsored by Moet et Chandon!

The Ocean Suite will sit 180 guests and can be used for many different style of events… Wedding receptions, Corporate Events, Team Building, Charity Balls and just about anything, this coupled with a roof terrace which can sit 250 makes this venue like nothing else along the South Coast!

We hope to give some more news soon and a date for an opening party….!

Watch this space!

Dear Dan

Was going to write you a letter but Laura has suggested I just email.

I wanted to tell you how pleased we all were with the catering and service at the ball on Friday. You did brilliantly and without a doubt contributed to what everyone is saying was the best Sparkle Ball of the lot!

Andy, Richard and Laura, as well as the whole team, could not have been more helpful and efficient. Even with the inevitable chaotic moments they remained smiling and kept everyone happy. It was all very impressive and there have been many compliments to Red.

The meal was utterly delicious. I managed a few mouthfuls (a first!) before I was called away to something else and they were really tasty. Guests commented on everything from the canapes to the end and loved it all.

And thank-you, Dan, for the very generous price you gave us. We did appreciate that, as it is always so scary trying to organise charity events – especially during a recession. I hope it will lead to many other commissions for you and if you would like to pass my telephone no. to possible future clients, I would be more than happy to highly recommend you.

Please pass on our thanks to every single member of your fantastic staff. Where on earth did you find them?!

If/when my daughters get married, I will be on to you first!

Many, many thanks to everyone at Red Anywhere. You deserve enormous success.

Sally

WELL DONE THE RED TEAM!

Two weeks ago I got a call from a lady asking if were available on the 26th March… I replied, for 2011, she replied know in 9 days time. I assumed that it would be a private dinner for 16 and perhaps the lady had been on our website looking for a Master Chef Experience…. How wrong was I?

I asked for how many guests… the lady replied 250-300 at that point I nearly fell off my chair… I said 250-300! In 9 days time! What has happened? Basically the previous caterers decided to pull out and the committee were frantically calling around to see if anyone could for-fill the event… Of course I said in a very calm manner we can do that, No problem… behind the scenes I was thinking of Staffing, Menu, Logistics etc etc but when you have a good team around you and the resources to pull something together like this in such a short space of time you get a real buzz….

So the team at Red moved into first gear and quickly started to get everything organised…. The menu was agreed, Staffing was in place…. Well that’s what Andy told me Logistics were organised all we had to do now was turn up and deliver exceptional food, service and drinks…. and guess what we did!!

The evening was a real success and all very calm… unusual for me in the kitchen, I must be mellowing in my old age (34) Staff were fantastic and everyone was very excited by the fact that were in the grounds or shadows of Arundel Castle… In a stunning marquee provided by Petworth Marquees and the just to add a bit of spice… the Band were Sirens…Two ladies who with their band, sound engineer and tour bus (joking ladies!) sang their hearts out, all the guests were up dancing, I even caught our staff swinging their hips!

All in all it was a real great event and a sense of real achievement was felt by all…. so if you have 9 days or less to go and your caterer lets you down and you need a plan putting together… don’t call the A Team call the RED TEAM!

Enjoy and Keep Smiling!

Well it’s a new year and we are already very busy…which is good! For the next couple of months we have over 15 couples booked in for tastings! This gives the couple a chance to come along to our state of the art kitchens, have a look round, meet the team and then settle down in our Tasting Room and enjoy a feast of food!

At Red we offer all of our clients a complimentary tasting for up to 4 people, some clients are surprised by this others expect it. We are only too happy to offer this service as we know not all of our competitors do!

How they work….

Couples, Clients, Friends generally have narrowed down there choice to 2 or 3 options by the time we get to a tasting. So we cook and present the dishes they have chosen for them to taste, picture and also see if the whole menu balances itself and obviously if they like it!

If for some reason (not happened yet) they do not like anything they have been served then we start again at no extra charge but as I said I am very proud that everyone has enjoyed our tasting sessions and more often or not gone with what we have spoke about previously….

It’s also a great way for us to talk about the rest of their plans for their event and get to know each other on a personal level, I feel it’s important we as a team at Red treat every client individually and on a very personal basis… this is something we pride Red Anywhere on!

So if you are looking to book an event but not sure what to eat or already booked one but cannot pick from the mouth watering options…. then a tasting is the way forward!

Some pictures below of a recent tasting we did for one of our brides this year…. by the way they LOVED IT!

I had a lunch appointment in Midhurst last Friday and on the way decided to stop at one of our venues we cater at called Grittenham Barn near Petworth, they were having a Christmas Fare. I am so glad I stopped even though the torrential rain made it interesting driving down the lane to the barn.

I was staggered by the amount of people that were there, it was great to see. The barn was packed with private sellers, all kinds of items for sale from luxury jumpers to hand made kids clothes, Jewels and of course the Coffee Fairy!

I was attracted to the stand firstly as they were serving coffee and secondly the branding… it looked amazing! very cool and very original for a coffee company. I met Martina who runs the Coffee Fairy… she is delightful… she offered me to taste the coffee which gladly accepted! To be honest I was not expecting much but I was gladly surprised…. I tried the Dark Roast and it was exceptional… Smooth (NOT BITTER… its not meant to be!) Rich and full of flavour, in fact it was one of the nicest cup of coffee’s I have tasted in a long time….

We then chatted away for a while about coffee and how and where its produced which is a fantastic story in its self please visit there website www.thecoffeefairy.com and read all about it…

On departing I bought a hand painted coffee mug with some coffee and agreed that Red Anywhere would be buying the coffee from January and would also wave the flag for the Coffee Fairy in Sussex!

I am so glad I visited Grittenham, you just don’t know what you will find when least expecting it!

Well done to Sally and Paul (owners of Grittenham) for putting on such a stunning fare!

I am a great believer in things happen for a reason and this is even more true when you hear how we found a beautiful venue in West Sussex….. We received an enquiry from a couple that said they were having their wedding reception at a county house near Arundel? Bailiffscourt sprang to mind and as I was Head Chef there for 3 years I knew we would notbe able to cater at the country house.

I spoke to the couple and asked them if their venue was Bailiffscourt and was told No! Ok where else can it be… They mentioned Northfields House near Arundel. I had to confess that I had never heard of it. Anyway they gave me the details and as soon as I got off the phone I was onto Google…. Low and behold after some searching I found it… and was I glad! The Pictures looked awesome and I could not believe it was on our doorstep.

I sent and email and introduced myself and quickly got a reply. We set up a meeting, Andy (my business partner) and I went to visit the house and meet the owner. Driving into Northfields gives you a real lift and the grand tall house overwhelms you with excitement.

We were met by Bibi who is wonderful, Bibi looks after all the marketing and sales for the house alongside Alasdair’s who owns the great property, Alasdair’s family have lived in the hose for many years. We were taking on a guided tour of the many rooms, bedrooms, dining rooms, drawing room, Piano room with no less than 5 Grand Pianos in the house. Then we went into the gardens were most of the weddings are staged with a marquee. The gardens are amazing, so much space, so quiet and beautifully manicured but still remaining rustic…. does that make sense?

There is a gorgeous outdoor heated swimming pool with pool house. Grass tennis courts, just like Wimbledon (without the grandstand) and lots and lots of unspoilt space!

The house also boast accommodation for up to 28 guests and if you fancy a game of squash then no problem…. the house has its own indoor squash court!

We are delighted to have found Northfields and since the start of our relationship, Alasdair has confirmed that we are now one of 2 recommended caterers and last week we secured our first wedding that was from the original phone call that told us about this stunning venue

We are also planning a corporate event for LWS Creative & Web Design in early February which will show the stunning venue off to 150 local business owners. I introduced Northfields to LWS when talking with Bibi and told them to contact Claire Love MD who would be more than happy to discuss web sites!

One more twist…. The groom of the couple that have booked us is the cousin of my good friend Jason who now lives in Scotland, he also is a great chef…. I taught him everything he knows!

So if you are looking for any type of corporate event be it t

eam building, seminar, directors lunch, board meeting, product launch or a fun day away from the office then Northfields is perfect for you!

Oh and don’t forget weddings….. you get the house for 3 days with lots of accommodation, swimming pool, tennis, squash and the chance to relax and chill out before the big day!

So all in all I think you will agree things do happen for a reason….

Regards

Down Time

So the wedding season is behind us and Christmas not quite upon us (no matter what the high street might think). What do we do here at Red with
all…this…time? I hear you ask.

You might imagine we use the break to catch up on current affairs (Face-book), to read that novel or file our nails, flicking through wedding magazines
and sighing – dreaming of the next time we’ll get to cater for a beautiful bride and a room full of her guests…

Well imagine again! I can categorically state that there is no day dreamy, Facebooky relaxation going on in the Red Office. Allow me to elaborate…

We’ve got next years’ Brides to think about first of all…
Then Corporate Dinners and Masked Balls, Wedding Fares in need of Stalls.
With Don’t Tell the Bride and Master Chef Meals, we’ve got bookings coming out of our ears.

New client in, no time to waste! There are menus to design and food to taste.
There are site visits, meetings, quotes to create. And an open Day soon, at Eastlands Estate!

With great Venues like Farbridge and the Dome, it’s a wonder we ever get home.
Emails beeping, phones ringing, Will in the Kitchen, singing…

I’d love to continue blogging in rhyme, but I’m really very busy – I don’t have the time!

Regards

Laura

Well how about a twist, we recently catered for a couple who loved food and wanted something “out of the box” for their wedding day!

So here is what we did. Roasts Sirloin of Scotch Beef served Medium Rare and Thick Cut, Served with Dauphineoise Potatoes, Wild Mushrooms, Beetroot Purée and wait for it……. Horseradish ICE CREAM…! Yes Horseradish ICE CREAM…. The guests loved it, I am sure some of them were not quite sure if it was horseradish cream!

So if you are looking for a caterer to give you something completely bespoke then look no further then Red Anywhere…. This dish was served to 100 guests and all commented on how innovative the dish was and how sublime the Ice Cream tasted, even if not to everyone’s taste

Dan, Andy and the team at Red are ecstatic about this relationship and Dan particularly was thrilled of the news… “Its worth persisting with something no matter how long it takes, we have been chipping away at Donna and the team at the Dome and now all our hard work has paid off”

Red are very excited at the prospect of catering on a more regular basis at the Dome and this starts with the “Gaps Ball” sponsored by British Airways for 500 covers next year which is Red Anywhere’s client…

Most of us on a Tuesday night would be at Home sitting down ready to watch another episode of EastEnders…. Not Red Anywhere…. We were at Brighton Dome last night cooking for 300 guests for the Annual NEA (National Energy Action) Conference Dinner….

We were delighted to be asked to cater for this prestigious event at the Dome, a venue that is fantastic for the numbers with its great facilities both front and back of house!

The menu needed to be excellent as usual for Red but also simple enough that it could be served in a short space of time. The menu consisted of Leek and Potato Soup with Crispy Leeks & Cheese on Toast. Roast Leg of Welsh Lamb, Fondant Potato, Rosemary Jus, Bowls of Braised Red Cabbage & Green Beans. For the dessert we finished off with Dan’s very silky Chocolate Mousse served in a Martini Glass with White Chocolate and Passion Fruit Sorbet……

It was a great night and everything went to plan…. we swerved the dinner in the time allocated and even had time to enjoy one of the desserts myself…. (Quality Control)

My team at Red did really well with special thanks to Laura and Richard who ran front of house with a professional and attentive team. Big thanks to my sous Chef Will and the rest of the kitchen team who all excelled under pressure on a big night!

Another Successful event from Red…. If you are looking for the Wow factor for any type of event and a company that is passionate about food, Drink and Service then let us know….

I was lucky enough to meet Keith a few times down in Cornwall where I am from. In his earlier days he ran a pub in Cornwall called the “Snooty Fox” we visited there regularly as a family and Keith was always out talking to people and telling stories, and always with a glass of red in his hand!

I remember watching Keith’s cookery programmes and I am sure that some of my inspiration to be a chef came from those early years watching Floyd on Fish…. His style and passion for cooking with good ingredients and producing simple but tasty food was fantastic and these days almost forgotten….

We wish him well as he lays to rest and thank him for the many years of great cooking, lots of laughter and a glass of wine or two!!

The Title must have you wondering what Red Anywhere are up to now! Well its all True…. Let me explain!

Red Anywhere catered at the prestigous Magic Circle HQ in London on Friday, This venue recently won venue of the year… I can see why!

The client was the UK’s leading Web Design and Internet Marketing Company Fresh Egg which is headed up by Adam Stafford who recently appointed James Caan off the very popular Dragons Den to be there Chairman….

Adam Stafford – MD Fresh Egg

Janes Caan – Chairman Fresh Egg

So…. The title hopefully makes sense now… well apart from the Magical Pots

This is where Red Anywhere took to the stage. I put togehter some exciting Grazing Bowls for the event as it was over 3 floors with only and hour for lunch, these included… Braised Blade of Beef, Horseradish Mash, Braising Juices. Thai Green Chicken Curry, Saffron & Jasmine Rice and Smoked Chicken Caesar Salad, Everyone a touch of magic that burst with flavour, even the resident magician was wowed by the Beef!

Then we served some “Magical Pots”… These were sublime desserts served in little black couldrons that surprised everyone… even me and I made them. We served Tangy Lemon Posset with poached Blueberries, Rich Chocolate Mousse with Bananas roasted in Rum and my favourite and very famous…. Sticky Toffee Pudding with Salted Toffee Sauce… definately magical!

The day was a great success and the team at Red Anywhere did a great job… We then travelled back to West Sussex were we loaded up for a wedding on the saturday…. thankfully not in London

If you are looking for the WOW factor for any event, a company that thinks out of the box and a dedicated team bursting with passion and flair then look no further then Red Anywhere!

Cheers
