What Knives do Chef’s use?

I often get asked what Knives I use and why. Knives are a little like clothes they go through trends and fashion and people tend to buy what ever they think is the best or perceived to be the best!

If you saw Gordon Ramsey using a Tesco Knife then everyone would buy them because they believe that if he uses them then they must be good….. Not always the case!

Over the years I have used various makes not because of fashion but because of the job they do and most importantly how they feel in the hand, if I think about it I hold a knife on average for 6-8 hours a day so it needs to feel good, that will give me the confidence to then use it without really thinking about it, Similar to an artist using a brush or a golfer with a club.

At the moment I am using a make called MAC professing to be the world’s sharpest knife and also the easiest to keep sharp which is really important. They have a nice weight to them and very comfortable grip and handle and do not give me blisters on my hand if cutting through tough ingredients or if used for a long time. These knives are available only to the professional but can be bought on the internet. The company that has the sole import on them Continental Chef Supplies a company that specialises in supplying high quality products to Chefs!

The MAC Knife is not cheap by any means but I am a great believer in that you get what you pay for! I would recommend the 8″ cooks knife which can be used for most kitchen jobs and also the Serrated Carver which is great for slicing almost anything. The oriental chopper is good for vegetables and shredding.

What you also need to keep these knives sharp is a good Steel, this is what profesional chefs use to keep their knives razor sharp…..

Chefs Tip… “A Steel will only keep a Sharp knife Sharp, it will not sharpen a blunt knife”

if after every time you use your knife you give it a couple of strokes at 45% angle over the steel it will stay sharp for a long time, if you let it go blunt you will then need to get the edge back on the knife by buying a sharpening stone or taking to your local iron monger or your local butcher may do it for you?

Other knives I have used over the years and still do are Victorinox, Drizeack and Wusthof all these knives apart from Victoronix our made with German steel which in my opinion is the best for knives.

Our Golf Day – A History

Red Golf day is now in its third year and has raised over 25k for local charities to date.

The idea came from myself (Dan Clarke) who luckily enough has been invited to play at lots of golf days. The downside with all these golf days was I became frustrated how they were all the same and there was very little to excite you apart from supporting the charity (which of course is not a bad thing)

So what did I do? Being the perfectionist, I decided to take on all other golf days and make the “Red” golf day the best ever!

The Red Anywhere Golf Day

This year we are taking over Slinfold Golf Club in Sussex which is a beautiful and very demanding golf course. We visited many local golf courses and chose Slinfold not just because of the course, but they have a track record in holding very good charity days including the Henry Cooper Annual Golf Day. (If its good enough for Henry it’s good enough for us!)

We were also very impressed by their genuine excitement of our plans and were very pro-active towards our day and the whole event, which for me was very important!

Tee-Off

We will arrive in the morning for a healthy fry up and coffee; team captains will sign in and issue their scorecards to players. Tee off will be from 9.30am; each team will play 18 holes and along the way find various challenges and fines including:

  • Nearest the pin with a chance to win a Audi (Red of Course) for the weekend!
  • Longest drive hopefully with a branded Driver!
  • Fines will be incurred for landing in the bunkers or in water (there is lots of this!) and anyone that 3 putts!

Pimm’s and Cocktails will be available around the course, along with individual challenges to compete in and further prizes can be had in the ‘Putting Competition’, ‘Bunker Challenge’ and ‘Longest Drive’ with the opposite hand to you use!

Evening Entertainment

We will be leaving Slinfold after a few beers and cocktails and travelling on open top bus to Eastland’s Estate where you will be wined, dined and taken home!

There will be a charity auction compared by local businessman and journalist Ian Hart with some great prizes including:

  • A Taylor Made Driver signed by Justin Rose
  • Eurostar trip and accommodation to Paris,
  • A Weekend in Cornwall at a golf resort and lots more…..

All Sound Good?

Price per team is £300 plus VAT for 4 people; this includes breakfast, coffee, golf, evening meal and arrival drink (basically a shed load)

We are supporting 2 local charities, Worthing Churches Homeless Projects and Sussex Autistic Society, all profit and monies raised through out the day will be split evenly

Master Chef experience raises £3000 at Goodwood Charity Ball!

Dan Clarke of Red Anywhere based in Littlehampton recently gave a Master chefs experience evening to the “Brain Tumour Research Campaign” based locally in Sussex.

The ball which was at Goodwood House was a great evening and raised over 20k for the charity which specializes in research to find out more about why and what causes brain Tumour to happen so quickly with devastating consequences!

the night was attended by lots of local people and also some well know celebrities, the ball was a great success said one guests and we look forward to next years where we aim to double the amount raised.

A special thank you was sent to Dan at Red Anywhere as his prize raised the most money on the night and really got the crowd going, a local guests from the Worthing area won the auction and is very much looking forward to his night of fine food, fine wine and excellent service

Red Anywhere recently catered for a private client in Brighton for a birthday celebration. The Client booked a “Master Chefs Experience” and invited 12 friends from all over West Sussex to his house based in Hove.

The Dinner consisted of “Seared Scallops with Apple Sauce, Picked Sultanas and Capers, followed by Rump of Lamb, Dauphineoise Potato, Roasted Vegetables and a Light Rioja Jus. Pud was a collection of puddings which included Home Made Rice Pudding with Clotted Cream, Creme Brulee and Mini Summer Pavlova.

the evening was finished off with coffee and fudge….

The team then washed up, packed up and headed back to their base in Littlehampton in West Sussex

Red Anywhere and Pretty Clever Events were recently asked to cater for NK Homes development launch in St Albans, Hertfordshire.

Red were given the task of creating innovative Canapes for around 200 guests, and to create a bespoke cocktail for the night which they were delighted to mix and muddle.

‘Pretty Clever’ event management specialists coordinated the whole event and ensured that the night went smoothly and everyone enjoyed themselves.

The feedback was very complimentary and Red Anywhere look forward to working with NK homes in the future!
